for annotating the letter, what do you do if you think it can be both logos and pathos?
do you just highlight it twice?
but then it would make my paper look ugly :(

You could highlight and underline to get both colors... But, think about the message before you highlight: is there a clearly stronger appeal to one persuasive type than the other? If so, only go with the one.
